Ingredients
- 1/3 cup melted coconut oil or extra virgin olive oil
- 1/2 cup honey or maple syrup
- 2 eggs
- 2 large bananas
- 1/4 cup milk or water
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon, plus more to dust on top
- 1 and 3/4 cups white whole wheat flour
Optional: 1/2 cup of the following if you like them! Chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit, fresh banana slices
Method
- Preheat oven to 165C and grease a 9 x 5 inch loaf tin
- In a large bowl beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk
- Add the baking soda, vanilla, salt and cinnamon and then whisk to blend.
- With a big wooden spoon stir the flour into the mixture until it is all combined. if you're adding any of the optional ingredients, stir them in now
- Pour the batter into the greased loaf tin and sprinkle lightly with cinnamon
- Bake for 55-60 minutes or until a toothpick or knife comes out clean when you insert it into the center
- let the bread cool in the loaf pan for 10 minutes and then pop it out and place it on a wire cooling tray for 20 minutes before serving
