Here's a nice and healthy filling meal for the whole family! Serve with extra vegetables to help towards getting your 5-a-day.
Serves 4
Ingredients
- 400g frozen fish pie mix or mixed fresh fish pieces
- 200g spinach
- 1 1/2 tablespoons of cornflour
- 450ml semi-skimmed milk
- 500g potatoes
- 1 egg
- salt and pepper to taste
Instructions
- Peel and chop the potatoes and boil until soft
- Push the cooked potatoes through a potato ricer or use a potato masher
- Add a little semi-skimmed milk to get a creamy mash consistency
- Make the sauce by mixing some of the cold milk with the cornflour to make a thick paste
- Heat the rest of the milk in a saucepan to just below boiling point and then remove from the heat and add the cornflour paste, stirring thoroughly
- Put the saucepan back on the stove until the sauce has thickened and a little salt and pepper or other seasoning of your choice
- Place the fish in an ovenproof dish (if you're using frozen fish you don't need to defrost it), add half of the sauce and then cover with spinach leaves
- Pour over the rest of the sauce on top of the spinach
- Add the mashed potato on top of the last layer of sauce
- Beat the egg and brush it over the top of the mashed potato
- Bake for 40 minutes at 170C or until bubbling and golden brown
NOTE: if your sauce is not thick enough then mix another teaspoon of cornflour with cold milk and pour into the hot sauce mix, stirring all of the time
