These pancakes might look like a treat but they are super healthy and a favourite of the players at breakfast time!
This recipe will produce 10 pancakes
Ingredients
- 1 large ripe banana, peeled and chopped up
- 1 scoop protein powder
- 2 medium eggs
- 1/4 teaspoon of baking powder
- 1/4 teaspoon of ground cinnamon (optional)
- Spray Oil
Method
- Place the banana in a mixing bowl and make a smooth paste using a fork or potato masher
- Crack the eggs into the bowl with the banana, add a scoop of whey protein powder then whisk together with a fork to make a batter
- Add the baking powder and cinnamon to the mixing bowl and whisk together thoroughly
- Coat a large non-stick frying pan with spray oil and heat over a medium - high heat. Add a tablespoon of the batter per pancake to the pan. Remember to keep them well spaced - you may only be able to cook three or four at a time
- Cook for 2-3 minutes until golden brown and then flip them over and cook for another 2-3 minutes
- Repeat the process until you have used all of your batter
- Serve the pancakes on a plate and add berries and yogurt to serve
